Sift the cake flour (80 grams) and cocoa powder (25 grams) into a mixing bowl. Set aside.

In a pan over low heat, melt the cooking oil (60 grams) and chocolate (30 grams). Once melted, remove from heat and whisk in the sifted dry ingredients until smooth. Add the 5 egg yolks and mix well to form a dough.

In a separate bowl, beat the 5 egg whites with the lemon juice (5 grams) using a hand mixer. Gradually add the sugar (65 grams) while mixing until stiff peaks form, creating a smooth meringue.
