  • 15 grams rice flour
  • 2 egg yolks
  • 2 egg whites
  • 50 grams granulated sugar

Directions

  1. Melt the dark chocolate in a heatproof bowl. Add the cream cheese, milk (or soy milk), cocoa powder, rice flour, and egg yolks. Mix thoroughly until smooth.

  2. In a separate bowl, beat the egg whites and granulated sugar with an electric mixer until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture until well combined.

  3. Pour the batter into an 18 cm cake pan lined with parchment paper. Bake in a preheated oven at 200°C (390°F) for 10 minutes. Lower the temperature to 160°C (320°F) and continue baking for 25 minutes. Allow the cake to cool completely before serving.
