  • 115 g milk (or soy milk)
  • 140 g rice flour
  • 15 g almonds
  • 5 g baking powder
  • 65 g rice oil (or unrefined vegetable oil, or melted butter)
  • 80 g dark chocolate

Directions

  1. Chop 80 g of dark chocolate into small pieces and set aside.

  2. In a mixing bowl, combine: 50 g cane sugar, 10 g cocoa powder, 1 whole egg, 115 g milk (or soy milk), 140 g rice flour, 15 g almonds, 5 g baking powder, 65 g rice oil (or unrefined vegetable oil, or melted butter) Chopped dark chocolate. Mix the ingredients well until the batter is smooth and uniform.

  3. Pour the batter into a piping or polymer bag. Pipe or pour the mixture into a small, round cake pan. Sprinkle the remaining chopped chocolate evenly over the top.

  4. Bake in a preheated oven at 170°C for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool before serving.
