  • 1 tablespoon honey, mixed with 1 tablespoon water

Directions

  1. In a mixing bowl, combine 160 ml of milk, 1 egg, 3 grams of yeast, and 38 grams of sugar. Stir with a spatula until well-mixed. Add 280 grams of wheat flour, 15 grams of cocoa powder, and 3 grams of salt. Mix thoroughly to form a dough. Cover the bowl and let it rest for 20 minutes.

  2. After 20 minutes, incorporate 30 grams of unsalted butter into the dough. Knead well until smooth, then shape the dough into a round. Cover with a lid and let it rise for 30 minutes.

  3. Divide the dough into 3 equal parts. Shape each part into a ball by rolling it with your hands. Cover the dough balls with plastic wrap and let them rest for 15 minutes.

  4. Roll each dough ball out into a rectangular shape using a rolling pin. Then, roll each piece back into a log shape. Place all the rolls together, cover with plastic wrap, and let them rise for 1 hour.

  5. Preheat the oven to 170°C (340°F). Bake the rolls for 25 minutes. After baking, brush the tops with a mixture of 1 tablespoon honey and 1 tablespoon water for a glossy finish.
