Directions
1. Step
Place a heatproof bowl over a pot of simmering water (double boiler method). Add the unsalted butter and dark chocolate to the bowl, stirring until fully melted. Remove from heat.

In a mixing bowl, whisk the egg and cane sugar until well combined. Gradually pour the melted butter and chocolate mixture into the egg mixture, stirring until smooth. Add the rice flour, almond flour, and potato starch to the mixture. Stir until a uniform dough forms.
3. Step
Divide the dough into portions of approximately 60 grams each. Roll them into round balls and place them on a sheet of parchment paper. Press a 10-gram piece of dark chocolate into the center of each dough ball.
4. Step
Microwave each dough ball at 500W for 50-60 seconds until set. Optionally, melt additional dark chocolate and drizzle over the cooked pieces for a decorative touch.
