Ingredients

  • 2 eggs
  • 90g sugar
  • 1 tsp vanilla extract
  • 90ml oil
  • 120ml milk
  • 120g flour
  • 30g cocoa powder
  • 7g baking powder
  • 1 tsp salt
  • 300ml heavy cream
  • 250g chocolate (chopped)
  • 50g butter

Directions

  1. Preheat the oven to 180°C (350°F). In a mixing bowl, whisk together the eggs, sugar, and vanilla until smooth. Add the oil and milk, stirring until well combined. Sift in the flour, cocoa powder, baking powder, and salt. Mix until smooth. Pour the batter into a greased 26cm baking pan. Bake for 12-15 minutes or until a toothpick comes out clean. Allow the cake to cool.

  2. In a saucepan over low heat, warm the heavy cream until it just begins to simmer. Remove from heat, add the chocolate and butter, and stir until melted and smooth.

  3. Pour the ganache over the cooled cake, spreading it evenly. Refrigerate for at least 2 hours to set.

  4. Remove from the fridge, cut into pieces, and garnish with fresh fruit if desired.
