Directions

  1. In a bowl, combine 120 ml of warm milk and 5 grams of dry yeast with a small amount of the sugar. Allow this mixture to sit for two minutes. In a separate bowl, mix the remaining 70 grams of sugar, 350 grams of flour, 1 teaspoon of vanilla extract, a pinch of salt, 50 grams of butter, one whole egg, and the egg white of the second egg. Knead to form a smooth dough. Cover and let it rise for 1 ½ hours, or until it has doubled in size.

  2. Once risen, divide the dough into 70-gram pieces. Grease a 27 cm round baking pan with a small amount of butter. Flatten each dough piece, add a bit of chocolate in the center, and roll it into a ball. Place the filled dough balls into the buttered pan, evenly spaced. Cover and allow them to rise for another 40 minutes.

  3. In a small bowl, mix the remaining egg yolk with a teaspoon of milk. Brush this mixture over the dough balls. Bake in a preheated oven at 180°C (350°F) for 15–20 minutes or until golden brown. Remove from the oven and let cool for five minutes, then brush with a small amount of melted butter.
