Directions
1. Make the Dough
In a large bowl, mix together rice flour, brown sugar, baking powder, egg, butter, 20g melted chocolate, and milk. This will form a soft dough.
2. Shape the Cookies
Roll the dough flat like a chapati. Use an 8cm round cutter to make large circles, then cut 3cm circles in the center to form rings.
3. Fry the Cookies
Heat oil in a pan. Fry the cookies on medium heat until golden on both sides. Let them cool.
4. Dip in Chocolate
Melt 100g of sweet chocolate. Dip each cooled cookie into the melted chocolate.
5. Chill and Serve
Place the dipped cookies on a tray and refrigerate for 10–15 minutes until the chocolate sets. Serve and enjoy!
