  • 15 g almonds, finely chopped
  • 15 g cocoa powder
  • 3 g baking powder
  • 2 whole eggs
  • 20 g unsalted butter
  • 50 g dark chocolate
  • 10 g milk
  • 60 g dark chocolate, melted
  • 20 g milk
  • 200 ml heavy cream
  • 10 g sugar
  • 1 tsp vanilla extract
  • 15 g dark chocolate, melted

Directions

  1. In a heatproof bowl, melt 20 g unsalted butter and 50 g dark chocolate over hot water. Set aside.

  2. In a mixing bowl, combine.40 g sugar, 1 g salt, 40 g rice flour, 15 g almonds, 15 g cocoa powder, 3 g baking powder, 2 whole eggs. Melted chocolate-butter mixture10 g milk. Mix until smooth.

  3. Brush oil on both sides of a waffle pan and preheat on low heat. Pour the batter into the pan and cook for 2–3 minutes per side. Set aside to cool.

  4. In a small bowl, mix 60 g melted chocolate with 20 g milk until smooth.

  5. Place a bowl over ice. Add 200 ml heavy cream, 10 g sugar, and 1 tsp vanilla extract. Whip until soft peaks form. Gently fold in the chocolate mixture until fully incorporated.

  6. Spread 15 g melted chocolate over a waffle. Top with the prepared cream, then place another waffle on top. Wrap in plastic and refrigerate for 2–3 hours.
