  • Salt: 1/2 tsp
  • Sugar: 3 tbsp
  • Vanilla sugar: 1 tsp
  • Egg: 1
  • Yeast: 1 tsp
  • Flour: 450 g (2.8 cups)
  • Butter: 50 g (2.5 tbsp)
  • Eggs: 2
  • Sugar: 2 tbsp
  • Vanilla sugar: 1 tsp
  • Cornstarch: 3 tbsp
  • Milk: 500 ml (2 cups)
  • Chocolate: 80 g (2.8 oz)

Directions

  1. In a large mixing bowl, combine 250 ml milk, 1/2 tsp salt, 3 tbsp sugar, 1 tsp vanilla sugar, 1 egg, 1 tsp yeast, 450 g flour, and 50 g butter. Mix until a smooth dough forms. Cover the bowl with plastic wrap and let it rest for 60 minutes.

  2. To prepare the filling, whisk together 2 eggs, 2 tbsp sugar, 1 tsp vanilla sugar, 3 tbsp cornstarch, and 500 ml milk in a saucepan. Heat the mixture over medium heat, stirring constantly, until it thickens. Divide the filling evenly into two bowls.

  3. Melt 80 g chocolate and stir it into one of the bowls of filling. Cover both bowls with plastic wrap to prevent a skin from forming.

  4. Once the dough has risen, divide it into 12 equal portions. Shape each portion into a round ball. Cover the balls with plastic wrap and let them rest for 15–20 minutes.

  5. Heat oil in a deep fryer or deep pan to 170°C (340°F). Fry the dough balls for 2 minutes on each side until golden brown. Drain on paper towels.

  6. Dust the fried dough balls with powdered sugar. Fill a piping bag fitted with a small nozzle or a paper cone with the chocolate filling. Pipe the chocolate filling into the fried dough balls.
