Ingredients

  • 100 grams unsalted butter
  • 60 grams powdered sugar
  • 1 whole egg
  • 130 grams rice flour (or 140 grams cake flour)
  • 40 grams almonds
  • 8 grams cocoa powder
  • 100 grams dark chocolate

Directions

  1. In a bowl, mix the unsalted butter, powdered sugar, egg, rice flour (or cake flour), and almonds until well combined. Separate 200 grams of the mixture and set aside. Add cocoa powder to the remaining mixture, mix well, and transfer both mixtures into separate plastic (polymer) bags.

  2. Cut the dough into biscuit shapes directly from the bags or after rolling it out. Bake the biscuits at 170°C (340°F) for 15–18 minutes.

  3. Finely chop the dark chocolate and melt it in a bowl over hot water. Dip half of the baked biscuits into the melted chocolate for a delightful coating.
