Directions

  1. Melt the chocolate into a smooth paste. Separate the eggs, setting aside the whites. In a mixing bowl, whisk together the 4 egg yolks, sugar, and almond powder until well combined.

  2. Incorporate the melted chocolate into the egg yolk mixture. In a separate bowl, add a pinch of salt to the egg whites and whisk them with an electric mixer until they form stiff peaks, creating a white foam.

  3. Gently fold the egg foam into the chocolate mixture until smooth. Pour the batter into a greased 18-20 cm round baking pan. Bake in a preheated oven at 180°C (350°F) for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
