Directions

  1. Drain excess water from the tofu. For better moisture removal, microwave it for 1 minute. Cut the tofu in half, then further divide one piece into two smaller portions.

  2. Cut the tomato into six equal pieces.

  3. Heat a pan over medium heat and add the microwaved tofu. Use a slotted spoon to mash the tofu while frying, helping to release any remaining moisture. Once the tofu is well-fried, add ½ tsp salt, mix well, and continue cooking until all moisture evaporates.

  4. Push the tofu to one side of the pan and add a small amount of oil to the empty space. Crack the egg into the pan and lightly fry it. Mix the egg with the tofu, then season with pepper (or chili powder, if preferred). Stir well and transfer to a bowl.

  5. Heat a little olive oil in the pan, then add the chopped tomato. Sauté until softened to enhance its flavor and nutritional benefits. Move the tomatoes to the side of the pan, then return the tofu mixture to the pan. Stir well and continue frying. For a smoother texture, mash the tomatoes while stirring to create a consistency similar to omelet rice.

  6. Transfer the dish to a serving plate and enjoy warm.
