  • 4–5 tbsp breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Parsley or dill, finely chopped (optional)
  • 1 small red pepper, finely chopped
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp turmeric or curry powder
  • 3 tbsp vegetable oil (for frying)
  • 1 knob butter (about 1 tbsp)
  • 1 small onion, finely chopped
  • 1 tbsp flour
  • 300ml vegetable or chicken stock (or 1/2 stock cube dissolved in 300ml water)
  • 200ml fresh cream
  • 1 tsp mustard
  • 1 tsp paprika
  • 1/2 tsp salt (adjust based on the saltiness of the broth)
  • A pinch of black pepper
  • 1 tbsp finely chopped parsley

Directions

  1. Place the chicken breast, garlic, red pepper, and a handful of parsley or dill into a blender. Blend until finely minced. Transfer the mixture to a bowl. Add salt, black pepper, paprika, turmeric (or curry powder), egg, and breadcrumbs. Mix well to combine. Cover the mixture and refrigerate for 30 minutes to firm up.

  2. Form and Cook the Patties After chilling, divide the chicken mixture into equal portions. Flatten each portion into a patty shape. Heat vegetable oil in a frying pan over medium heat. Fry the patties for 2–3 minutes on each side until golden. Remove and set aside.

  3. In the same pan, melt the butter over medium heat. Add the onion and sauté until translucent. Stir in the flour and cook for 1–2 minutes to remove the raw taste. Gradually add the stock while whisking to prevent lumps. Add cream, mustard, paprika, salt, and black pepper. Stir to combine.
