Ingredients
- 1 chopped onion (300 g)
- Cinnamon, cardamom, cloves, and bay leaves
- 1 whole chicken, cut into pieces (1000 g), skin removed
- 1 tbsp salt
- 1 tsp each: cumin, coriander, paprika, black pepper
- ½ tsp each: turmeric, ginger
- 2 tbsp tomato paste (40 g)
- 1 tbsp minced garlic (15 g)
- 1 minced bell pepper (130 g)
- 1 minced carrot (100 g)
- 3 minced tomatoes (350 g)
- 8 cups hot water
- 2 dried lemons
- A few whole hot chilies
- 2 cups long-grain basmati rice (400 g), washed and soaked
- Fresh coriander leaves for garnish

Directions
1. Step
Heat a pan over medium heat and add a little vegetable oil. Sauté the chopped onion until soft and golden. Stir in the cinnamon, cardamom, cloves, and bay leaves. Add the chicken pieces and stir in salt, cumin, coriander, paprika, black pepper, turmeric, and ginger. Mix in the tomato paste and minced garlic. Add the chopped bell pepper, grated carrot, and minced tomatoes. Stir well to combine.

Pour in the hot water, ensuring the chicken is fully covered. Add the dried lemons and whole green chilies. Cover and cook on medium heat for 30 minutes. Stir in the washed and soaked basmati rice. Cover and cook on medium heat until the water level reduces. Reduce the heat, cover, and let the rice cook for 25 minutes until fully done. Garnish with fresh coriander and serve hot.
