Ingredients
- 200g carrots (cut into small pieces)
- 2 pinches salt
- 130g potato starch (wheat flour can be substituted; avoid corn starch)
- 20ml water (only if boiling carrots in the microwave)
- 8g (1 tbsp) soy sauce
- 5g (1 tsp) oyster sauce (or substitute with 0.5 tbsp soy sauce)
- 3g (1 tsp) sugar
- 3g (0.5 tbsp) chili powder (paprika can be substituted or omitted)
- 4g (1 tsp) minced garlic
- 7g (1 tbsp) chopped green onion
- 8g (1 tbsp) sweet peanut butter
- 16g (2 tbsp) avocado oil (or other vegetable oil)
- 32g (4 tbsp) noodle boiling water

Directions
1. Step
Cut the carrots into small, easy-to-cook pieces. Place them in a bowl, add 20ml of water, and microwave for about 7 minutes (700W) until soft. Meanwhile, chop the green onions and set aside.

Mash the softened carrots until smooth. In a bowl, combine the mashed carrots with 130g potato starch and 2 pinches of salt. Mix well and shape the dough into small round pieces, making a hole in the center.
3. Step
Bring a pot of water to a boil and add the shaped dough pieces. Gently stir to prevent sticking and boil for about 5 minutes. Remove from the water and rinse with cold water.

In a bowl, mix together: 8g soy sauce, 5g oyster sauce (or soy sauce substitute), 3g chili powder, 3g sugar, 4g minced garlic, 8g sweet peanut butter, 7g chopped green onion. Stir until well combined.

Heat 16g avocado oil in a pan over medium heat. Add the sauce mixture and 32g noodle boiling water, stirring to combine. Add the boiled carrot dough bites, mixing well to coat them in the sauce. Serve warm, arranging the pieces neatly.
