  • 150 g pitted cherries
  • 100 ml water
  • 200 g sugar
  • 8 g agar-agar
  • 2 egg whites
  • 70 g sugar
  • 3 tbsp powdered sugar

Directions

  1. In a saucepan, combine the pitted cherries and water. Bring to a boil, then blend with an electric mixer until smooth. Strain the mixture through a sieve to remove any solids.

  2. Add the sugar and agar-agar to the strained cherry puree, mix well, and bring to a boil again. Let it simmer for a few minutes while stirring.

  3. In a separate bowl, beat the egg whites with 70 g of sugar using an electric mixer for 2-3 minutes until soft peaks form.

  4. Slowly pour the hot cherry mixture into the beaten egg whites while continuously mixing for about 5 minutes until the mixture becomes fluffy.

  5. Let the mixture sit at room temperature for 10-12 hours to set. Once firm, transfer it into a piping bag with a star-shaped nozzle.
