  • 1 zucchini
  • 3 eggs
  • 2 pinches salt
  • ½ onion
  • 1 handful enoki mushrooms
  • ½ bell pepper
  • ¼ cup sweet corn
  • 1 sausage
  • ½ cup mozzarella cheese (divided)
  • Black pepper (to taste)
  • Cooking oil

Directions

1. Step

Crack the eggs into a bowl, add salt, and beat well. Thinly slice the zucchini into 7–10 pieces. Finely chop the onion, enoki mushrooms, bell pepper, and sausage.

Heat a pan over low heat and add a little cooking oil. Arrange the sliced zucchini in the pan. Pour half of the beaten eggs over the zucchini, spreading evenly. Once the eggs start to set, carefully flip them over. Remove from the pan once fully cooked.

3. Step

Repeat the process by layering the zucchini slices in the pan again. Pour the remaining beaten eggs over the zucchini. Sprinkle half of the mozzarella cheese, followed by the chopped onion, enoki mushrooms, bell pepper, sausage, and sweet corn. Add the remaining mozzarella cheese on top and sprinkle with black pepper. Cover with another egg sheet (previously cooked), cover with a lid, and cook on low heat for a few minutes. Carefully flip onto a plate, then return to the pan and cook for another 20–30 seconds.
