  • 1 potato
  • ½ onion
  • 1 small carrot
  • 1 egg
  • 3 tablespoons rice flour
  • 2 teaspoons curry powder
  • Salt and pepper (to taste)

Directions

  1. Finely chop the onion and place it in a bowl. Grate the zucchini, add ½ tablespoon of salt, mix well, and let it sit for 10 minutes.

  2. Peel and grate the potato, then place it in a clean cloth. Squeeze out excess water and transfer to a bowl. After 10 minutes, squeeze out the moisture from the salted zucchini using a cloth. Add it to the potato.

  3. Add the onion, grated carrot, and egg to the mixture. Season with 1 teaspoon of salt, pepper, and a pinch of chili powder. Mix thoroughly.

  4. Add 3 tablespoons of rice flour and mix well. Adjust with more flour if needed for consistency. Stir in 2 teaspoons of curry powder and combine.
