Directions

1. Step

Slice the sweet potato into rounds, then flatten and cut them into smaller pieces. Place the pieces in a bowl, cover with water, and soak for 10 minutes. After soaking, drain the water and pat the sweet potatoes dry using tissue paper. Transfer them to a clean bowl.

Heat oil in a pan over medium-low heat. Add the sweet potato pieces one by one, arranging them in a circular pattern. Cover the pan and cook for about 3 minutes. Remove the lid, flip the sweet potatoes, and crack an egg into the center. Sprinkle mozzarella and cheddar cheese powder over the potatoes. Cover and cook until the cheese melts.
