- 2 potatoes
- 1.5 tbsp rice flour
- 1/2 tsp salt
- Mozzarella cheese
- 10 g butter
- 1 tbsp honey
- 1/2 tsp minced garlic
- Parsley (for garnish)

Finely chop the potatoes and place them in a bowl. Wash thoroughly with water to remove excess starch. Drain well. Add 1.5 tbsp rice flour and 1/2 tsp salt to the potatoes. Mix until evenly coated.

Heat a square pan over medium-low heat and lightly oil it. Spread half of the potato mixture evenly in the pan. Fry until golden and lightly crispy, then carefully flip using a spoon or spatula. Fry until both sides are crispy. Remove and set aside.

In the same pan, spread the remaining potato mixture evenly. Place mozzarella cheese on top of the potatoes. Add a splash of water (to help melt the cheese) and cover with a lid for a minute. Once the cheese is melted, place the previously fried potato layer on top. Press gently and fry until the outside is crispy and golden.
