- 300 ml milk
- 150 g flour
- 30 g melted butter
- ½ tsp salt
- 1 tsp sugar
- 2 eggs
- A pinch of ground coriander
- 400 g chicken breast, diced
- 100–200 g mushrooms, sliced
- 1 onion, finely chopped
- 1 clove garlic, minced
- 1 bell pepper, diced
- 1 drizzle of olive oil
- 3 tbsp creme fraiche
- Salt, pepper, and a pinch of thyme

Directions
1. Step
In a mixing bowl, whisk together the eggs, sugar, and melted butter. Gradually add the milk and flour while stirring to create a smooth batter. Mix in the ground coriander and salt. Heat a non-stick pan over medium heat and pour a ladle of batter into the pan, swirling to form a thin, round crêpe. Cook for about 1–2 minutes on each side until golden, then set aside. Repeat with the remaining batter.
2. Step
In a pan, heat a drizzle of olive oil over medium heat. Sauté the chopped onion and minced garlic until fragrant. Add the mushrooms and cook until softened. Stir in the diced chicken breast, season with salt, pepper, and thyme, and cook until fully cooked through. Mix in the crème fraîche and remove from heat.
3. Step
Place some of the chicken and mushroom filling inside each crêpe and fold it over. Arrange the filled crêpes in a baking dish and sprinkle with diced bell pepper and extra chopped onion if desired. Bake in a preheated oven at 200°C for 10 minutes. Remove from the oven and serve warm. Enjoy!
