Directions

1. Step

Soak the finely chopped cabbage in green tea water for 5 minutes, then rinse and drain.

2. Step

In a bowl, combine the chopped cabbage, green onion, and eggs. Season with salt, pepper, and a pinch of sugar. Mix well.

3. Step

Using a knife, carefully remove the soft inside of both bread slices, leaving only the crust as a frame.

4. Step

Heat a pan over medium heat and melt a small piece of butter. Place the bread frames onto the pan and toast them lightly. Add a little more butter in the middle of each bread frame.

5. Step

Once the butter has melted, pour the cabbage-egg mixture into the center of each bread frame. Sprinkle mozzarella cheese over one and cheddar cheese over the other.

6. Step

Place the removed inner bread pieces on top of the filling. Press down gently with your hands, then use a spatula or spoon to press firmly.

7. Step

Flip the toast carefully, add a small piece of butter, and spread it evenly across the surface. Continue cooking until both sides are golden brown and crispy.
