  • 30g almonds, finely chopped
  • 30g cane sugar
  • 25g unsalted butter, softened
  • Pinch of salt
  • 200g cream cheese, softened
  • 60g cane sugar
  • 5g cake flour
  • 2 whole eggs
  • 100ml heavy cream
  • 1 teaspoon lemon juice

Directions

  1. In a bowl, mix the cake flour, chopped almonds, cane sugar, salt, and unsalted butter until crumbly. Set aside.

  2. In a separate bowl, whisk together the cream cheese, cane sugar, flour, eggs, heavy cream, and lemon juice until smooth.

  3. Pour the cheesecake mixture into a 6 × 17 cm pound cake pan. Bake in a preheated oven at 180°C (356°F) for 15 minutes.

  4. Carefully remove the partially baked cheesecake from the oven and evenly spread the almond streusel mixture on top.

  5. Return to the oven and bake at 180°C (356°F) for an additional 20 to 25 minutes, or until the topping is golden brown.
