Directions

  1. Preheat your oven to 180°C (356°F). Spread the almonds and hazelnuts on a baking tray. Roast them in the oven for 10 minutes. Once roasted, let them cool slightly, then rub the nuts with a clean kitchen towel to remove their skins.

  2. Heat a pan over medium heat and add the sugar. Stir occasionally until the sugar melts and turns into a golden caramel. Quickly mix the peeled almonds into the caramel until they are well coated. Transfer the caramel-coated almonds onto a parchment-lined surface. Let them cool and harden. Once hardened, break the caramel-almond mixture into smaller pieces.

  3. Place the caramel-almond mixture in a blender. Add a little water (just enough to help with blending) and blend until smooth. Optionally, add a pinch of salt and a touch of vanilla for extra flavor. Transfer the almond paste into a clean jar and store it in the refrigerator.
