  • 1 tablespoon water
  • 1 tablespoon hot water
  • 450 grams milk
  • 2 teaspoons vanilla extract
  • 5 whole eggs
  • 60 grams granulated sugar

Directions

  1. In a pan, combine 50 grams of granulated sugar with 1 tablespoon of water. Heat the mixture until it caramelizes and turns red. Once the desired color is achieved, carefully add 1 tablespoon of hot water and mix well. Immediately pour the caramel into a small bowl, tilting it to coat the entire interior surface evenly. Set aside.

  2. In another pan, heat 450 grams of milk with 10 grams of granulated sugar and 2 teaspoons of vanilla extract until it reaches approximately 60°C. Stir well and set aside. In a mixing bowl, whisk together 5 whole eggs and 50 grams of granulated sugar until combined. Gradually add the warmed milk mixture into the eggs while stirring continuously to prevent curdling. Strain the mixture if needed for a smoother consistency. Pour the mixture into the caramel-coated bowl.

  3. Cover the bowl tightly with aluminum foil.

  4. Prepare a water bath by heating water to 150°C. Place a cloth at the bottom of the pan to prevent the bowl from sliding. Gently place the foil-covered bowl into the water bath. Cover the pan with a lid and let it cook for 55 to 60 minutes.

  5. Remove the bowl from the water bath and allow it to cool slightly before transferring it to a container. Serve chilled or as desired.
