  • 4 slices of bacon
  • 1/2 cup mozzarella cheese (shredded)
  • Tonkatsu sauce (as desired)
  • Mayonnaise (as desired)
  • Butter (for frying)

Directions

  1. Finely chop the cabbage and rinse it thoroughly with water. Place the cabbage in a bowl, crack in the eggs, and season lightly with salt and pepper. Mix well to combine.

  2. Heat a pan and add a small amount of butter. Place one slice of bread in the pan and spread the melted butter evenly on it. Repeat with all 4 slices.

  3. In the same pan, fry the bacon slices until crispy. Set them aside. Add half of the cabbage mixture to the pan, spreading it evenly. Fry it until golden and slightly firm. Flip the cabbage with a spatula, and cook the other side until done. Repeat with the remaining cabbage mixture.

  4. Place the fried cabbage on a slice of bread. Top the cabbage with 2 slices of bacon and a generous layer of mozzarella cheese. Cover the pan with a lid and allow the cheese to melt. Drizzle with tonkatsu sauce and mayonnaise. Place another slice of fried bread on top to complete the sandwich.
