  • 80 g butter (melted)
  • 300 g fresh blueberries
  • 1 tbsp sugar
  • 1 tbsp flour
  • 1 tbsp lemon juice
  • 90 g flour
  • 50 g brown sugar
  • 50 g butter
  • 800 g cream cheese (Philadelphia or preferred brand)
  • 190 g sugar
  • 200 g full cream
  • 12 g cornstarch
  • 1 tbsp vanilla extract
  • 4 eggs

Directions

  1. Crush 300 g of biscuits into fine crumbs. Mix with 80 g melted butter until well combined. Press the mixture into the bottom of a round baking pan to form an even crust. Set aside.

  2. In a bowl, beat 800 g cream cheese, 190 g sugar, and 4 eggs until smooth. Add 200 g full cream, 12 g cornstarch, and 1 tbsp vanilla extract. Mix well. Pour the cheesecake mixture over the biscuit base.

  3. In another bowl, mix 300 g fresh blueberries with 1 tbsp sugar, 1 tbsp flour, and 1 tbsp lemon juice. Spread the blueberry mixture evenly over the cheesecake layer.

  4. Mix 90 g flour, 50 g brown sugar, and 50 g butter until crumbly. Cover the bowl with plastic wrap and refrigerate for a few minutes.

  5. Sprinkle the crumble mixture over the blueberry layer. Bake in a preheated oven at 160°C (320°F) for 20 minutes. Once done, remove from the oven, allow to cool, slice, and enjoy!
