  • 70 g (1/2 cup) cashews
  • 180 g (6.35 oz) dates
  • 75 g (1/2 cup) almonds
  • 60 g (1/2 cup) oatmeal
  • 1 tbsp unsweetened cocoa powder
  • 125 g (1 cup) blueberries
  • 80 ml (1/3 cup) milk (any variety)
  • 2 tbsp honey
  • 1 tsp agar-agar
  • 80 ml (1/3 cup) water
  • 2 tbsp coconut oil

Directions

  1. Simmer 70 g (1/2 cup) cashews in boiling water for 30 minutes.

  2. Simmer 180 g (6.35 oz) dates in boiling water for 15 minutes.

  3. In a blender, combine 75 g (1/2 cup) almonds, 60 g (1/2 cup) oatmeal, and 1 tbsp unsweetened cocoa powder. Blend until finely ground.

  4. Add the soaked dates to the blender and blend until smooth. Spread this mixture evenly into a rectangular container.

  5. In a tall glass or blender, combine: 125 g (1 cup) blueberries, 80 ml (1/3 cup) milk of your choice, 2 tbsp honey, 70 g soaked cashews. Add 2 tbsp coconut oil and blend until smooth.

  6. In a saucepan, mix 1 tsp agar-agar with 80 ml (1/3 cup) water. Heat until fully dissolved. Combine this agar mixture with the blended blueberry mixture.
