Ingredients
- 250 g onion, chopped
- Whole spices: 1 cinnamon stick, 2 bay leaves, 3 cardamom pods, 4 cloves
- 15 g (1 tbsp) minced garlic
- 1 kg beef or lamb
- 1 tsp each: cumin, coriander, black pepper, paprika
- ½ tsp turmeric
- 40 g (2 tbsp) tomato paste
- 350 g (3) chopped tomatoes
- 2 cups basmati rice, washed and soaked
- A few small bell peppers
- Reserved stock from cooking the meat
- ½ tsp each: cinnamon, cardamom, cloves, cumin, coriander, paprika

Directions
1. Step
Heat a pan over medium heat with a little vegetable oil. Add the chopped onion and whole spices (cinnamon, bay leaves, cardamom, and cloves). Sauté until fragrant.

Stir in the minced garlic, meat, powdered spices, and tomato paste. Add the chopped tomatoes and cover with hot water. Simmer on medium heat for 1 hour or until the meat is tender. Remove the meat and reserve some of the broth.

Add the rice and bell peppers to the remaining broth in the pot. Cook over medium heat until the liquid reduces, then cover and lower the heat. Let it simmer for 25 minutes. Meanwhile, mix 1 teaspoon tomato paste with a scoop of reserved broth and brush it over the meat.

Sprinkle the reserved spice mix over the meat and roast in the oven until golden and aromatic. Serve the roasted meat over the fragrant rice.
