Ingredients
- Vegetable oil (for cooking)
- 300 g chopped onion
- 2 cinnamon sticks
- 4 cardamom pods
- 4 cloves
- 2 bay leaves
- 1 kg beef with bones
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon paprika
- 1 teaspoon black pepper
- ½ teaspoon turmeric
- ½ teaspoon ginger powder
- 2 tablespoons (40 g) tomato paste
- 1 tablespoon (15 g) fried garlic
- 140 g chopped bell pepper
- 120 g grated carrot
- 3 chopped tomatoes (350 g)
- 2 dried lemons
- 1 whole hot chili pepper (optional)
- 1 teaspoon salt
- 2 cups long-grain basmati rice (washed and soaked)
- Hot water (as needed)
- Fresh coriander (for garnish)

Directions
1. Step
Heat a little vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until soft and golden. Stir in the cinnamon sticks, cardamom pods, cloves, and bay leaves, allowing their aroma to infuse the oil. Add the beef with bones and sear until lightly browned.

Add the dried lemons and the whole hot chili pepper (if using). Cover and cook over medium heat for 1 hour.

After 1 hour, stir in the salt. Add the washed and soaked basmati rice, then pour in enough hot water to just cover the rice (approximately 1 cup). Cover and cook over medium heat until the water is absorbed. Reduce the heat to low and continue cooking for another 25 minutes.
