Ingredients

  • 2 medium bananas
  • 1 egg
  • 1/3 cup (80 ml) milk (any type)
  • 1 cup (100 g) oatmeal
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/2 teaspoon cinnamon
  • 1/3 cup (30 g) walnuts, chopped
  • 2 additional bananas
  • 1 tablespoon unsweetened cocoa powder
  • Fresh strawberries

Directions

  1. Peel 2 medium bananas and mash them in a bowl using a fork or slotted spoon. In a large mixing bowl, combine the mashed bananas, 1 egg, and 1/3 cup (80 ml) of milk. Mix well with a hand mixer or whisk. Add 1 cup (100 g) of oatmeal, 1 teaspoon of baking powder, a pinch of salt, and 1/2 teaspoon of cinnamon to the wet ingredients. Mix thoroughly.

  2. Chop 1/3 cup (30 g) of walnuts into small pieces and fold them into the mixture using a spoon.

  3. Lightly grease the inside of 4 microwave-safe mugs with a bit of oil. Divide the mixture evenly between the mugs. Bake in a preheated oven at 360°F (180°C) for 20–25 minutes, or until a toothpick inserted into the center comes out clean.

  4. Peel and mash the remaining 2 bananas in a small bowl. Add 1 tablespoon of unsweetened cocoa powder and mix until smooth. Once the baked oatmeal is done and slightly cooled, remove it from the mugs. Spread the banana-cocoa mixture on top and garnish with fresh strawberries.
