In a large bowl, mix together: Egg yolks (3 pcs), Salt (a pinch), Sugar (120 g), Butter (150 g), Sour cream (130 g), Gradually add flour (400 g) and baking soda (a pinch), mixing well to form a dough. Cover the dough with plastic wrap and refrigerate for 1 hour.

In another bowl, beat egg whites (3 pcs) until foamy. Gradually add sugar (150 g) and continue mixing until well combined. Stir in walnuts (250 g) until evenly distributed.

Divide the chilled dough into 8 equal parts. Roll each part into thin layers using a rolling pin. On each layer: Spread a bit of ghee (80 g in total). Sprinkle some flour. Add a layer of walnuts from the filling. Repeat the layering process as desired.

Mix 1 egg yolk with 1/2 tsp of milk. Brush the mixture over the top layer of the assembled dough. Sprinkle additional walnuts (50 g) on top for garnish. Cut the layered dough into desired shapes.

Preheat the oven to 160°C (320°F). Bake for 40-45 minutes. While baking, prepare the syrup: In a hot pot, heat sugar (100 g), honey (40 g), and water (100 ml) for 5-7 minutes. Once the pastry is baked, pour the hot syrup over it. Increase the oven temperature to 200°C (390°F) and bake for another 10 minutes. Remove from the oven, let cool slightly, and cut into pieces.
