  • 1 cup (100 g) oatmeal
  • 1 cup (240 ml) milk of your choice
  • 50 g dried blueberries
  • 50 g raisins
  • 2 eggs
  • A pinch of salt
  • 1/2 tsp ground cinnamon
  • 1/3 cup (30 g) almond flour
  • 1 tsp baking powder
  • 1/3 cup (100 g) Greek yogurt
  • 2 apples
  • 2 tbsp vegetable oil
  • 50 g walnuts (chopped)

Directions

  1. In a bowl, mix 1 cup (100 g) of oatmeal with 1 cup (240 ml) of milk. Stir and set aside to soak. Separately, soak 50 g of dried blueberries and 50 g of raisins in warm water.

  2. Grate 2 apples and place them in a large mixing bowl. Add 1/2 tsp ground cinnamon, 2 eggs, and a pinch of salt. Mix well, then combine with the oatmeal soaked in milk and the blueberries and raisins (drained).

  3. Add 1/3 cup (30 g) almond flour, 1 tsp baking powder, and 2 tbsp vegetable oil to the mixture. Stir until evenly combined.

  4. Pour the mixture evenly into a 6-inch (15 cm) baking dish. Sprinkle 50 g of chopped walnuts over the top.

  5. Bake in a preheated oven at 360°F (180°C) for 35-40 minutes, or until golden brown and set.
