  • 1 cup (120 g) oatmeal
  • 3 eggs (separated into yolks and whites)
  • 1 teaspoon salt
  • 3 tablespoons coconut sugar (divided)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 3 apples (cut into small pieces)

Directions

  1. Blend the oatmeal into a fine powder using a blender. Set aside.

  2. Separate the eggs, placing the yolks in one bowl and the whites in another. Add 1 teaspoon of salt and 3 tablespoons of coconut sugar to the egg whites. Beat the mixture until well combined.

  3. To the egg yolks, add 3 tablespoons of coconut sugar, 1 teaspoon of baking powder, and 1 teaspoon of vanilla extract. Mix well. Then, gradually combine the blended oatmeal, the beaten egg whites, and the yolk mixture. Stir until smooth. Finally, fold in the apple pieces.
