  • 1 egg
  • 3 tablespoons sugar
  • 2 tablespoons cornstarch
  • 8 grams vanilla sugar
  • 300 ml milk
  • 1 teaspoon butter
  • 2 apples
  • 2 tablespoons sugar (for apples)
  • 1 tablespoon butter (for apples)
  • A pinch of cinnamon
  • Puff pastry
  • 1 egg yolk + 1 teaspoon milk (for egg wash)
  • Almonds (optional, for garnish)
  • Powdered sugar (for dusting)

Directions

  1. In a bowl whisk together the egg, 3 tablespoons of sugar,cornstarch, and vanilla sugar until smooth. Gradually add the milk while stirring to combine. Transfer the mixture to a saucepan and cook over medium heat, stirring continuously until it thickens. Remove from heat, add 1 teaspoon of butter, and mix well. Pour the custard into a bowl, cover it with plastic wrap (pressing it onto the surface to prevent a skin from forming), and refrigerate until cool.

  2. Peel and grate the apples. In a pan over medium heat, add the grated apples, 2 tablespoons of sugar, a pinch of cinnamon, and 1 tablespoon of butter. Stir and cook until the apples soften and the mixture slightly caramelizes. Transfer to a bowl and let it cool.

  3. Roll out the puff pastry on a lightly floured surface. Place a spoonful of cooled custard on one side of the pastry and top it with the apple mixture. Fold the pastry over the filling and press down the edges to seal. Use a fork to crimp the edges. In a small bowl, mix the egg yolk and 1 teaspoon of milk. Brush this mixture over the pastry for a golden finish. Cut the pastry into portions and sprinkle with chopped almonds (if using).

  4. Preheat the oven to 180°C (350°F). Place the pastries on a lined baking tray and bake for about 20 minutes or until golden brown. Remove from the oven and dust with powdered sugar before serving.
