Directions
-
Peel and cut the apples into small pieces. Add 40 g of sugar and 4–5 tbsp of lemon juice to the apples. Cook the mixture on low heat for 8–10 minutes until softened. Set aside to cool.
-
In a bowl, combine the flour, baking powder, and a pinch of salt. Mix well. Add the butter and mix with your hands until the mixture resembles crumbs. In a separate bowl, whisk together the egg yolks and 40 g of sugar. Add the yolk mixture to the flour mixture and combine with your hands until a dough forms.
-
Press half of the dough evenly into the bottom of a 20 cm baking form. Use your fingers to create a slight edge around the sides. Chill the dough in the refrigerator for 15–20 minutes.
-
In a bowl, beat the egg whites, vanilla extract, and 40 g of sugar until soft peaks form (about 5–7 minutes). Fold in the cornstarch and yogurt (or sour cream) until well combined.
-
Remove the baking form from the refrigerator. Spread the cooked apple mixture evenly over the dough base. Pour the yogurt filling on top, leveling it evenly. Sprinkle the remaining dough crumbs over the filling. Bake in a preheated oven at 180°C (350°F) for 40–45 minutes.
-
Remove the baking form from the oven and allow it to cool slightly. Sprinkle with powdered sugar before serving.
