  • Flour: 170–180 g
  • Cottage Cheese: 220 g
  • Sugar: 40 g
  • Butter: 100 g (plus 1 tbsp for cooking apples)
  • Baking Powder: 1 tsp
  • Vanilla: 1 tsp
  • Salt: A pinch
  • Apple: 1, chopped into small pieces
  • Cinnamon: To taste
  • Sugar (for apple filling): 2 tbsp

Directions

  1. Chop the apple into small pieces. In a pan, combine the chopped apple, 2 tablespoons of sugar, 1 tablespoon of butter, and cinnamon to taste. Cook over medium heat until the apple pieces soften. Set aside to cool.

  2. In a mixing bowl, combine the cottage cheese, 100 grams of butter, and 40 grams of sugar. Mix well until smooth. Add the vanilla, salt, baking powder, and 170–180 grams of flour. Mix until the ingredients are well incorporated. If needed, add a little more flour to create a soft, pliable dough. Knead gently with your hands to bring it together.

  3. Roll out the dough on a floured surface to a thickness of 3–4 mm. Use a cookie cutter to cut out circles (or desired shapes). Collect the scraps, knead lightly, and roll out again to maximize dough usage. Place the cut dough pieces on a baking sheet lined with parchment paper. Spoon a small amount of the cooked apple mixture onto one piece of dough. Stack a second piece of dough on top to create a layered cookie. Lightly flour the edges of the top layer and use a knife or skewer to pierce it with four slits.

  4. Preheat the oven to 180°C (356°F). Bake the cookies for 15 minutes or until golden brown. Allow them to cool slightly before serving.
