  • 2 apples (chopped)
  • 3 eggs
  • 150 ml milk
  • 125 g sugar
  • A pinch of salt
  • 270 g flour
  • 75 ml seed oil
  • 14 g baking powder
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • Raisins (optional)
  • Apricot jam (optional, for topping)
  • 26 cm cake dish

Directions

  1. Peel and chop the apples into small pieces. In a large bowl, whisk together the eggs, sugar, salt, and vanilla extract until combined. Add the seed oil and milk, and mix well. Gradually add the flour and baking powder, stirring until the batter is smooth. Fold the chopped apples into the batter.

  2. Pour the batter into a greased or parchment-lined 26 cm cake tin. Arrange thin slices of apple on top of the batter. Sprinkle raisins (if using), cinnamon, and a little sugar over the top.

  3. Bake in a preheated oven at 180°C (350°F) for 40 minutes, or until a toothpick inserted in the center comes out clean.

  4. Once the cake is baked, let it cool slightly and brush the top with apricot jam for a glossy finish.
