  • 3 cups (300 g) oatmeal
  • 1/2 tsp salt
  • 1/2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1.8 oz (50 g) raisins
  • 1 apple
  • 2 medium bananas
  • Juice of 1/2 lemon
  • 4 tbsp coconut oil
  • 1/3 cup (55 g) cornmeal
  • 1 tbsp baking powder

Directions

  1. Add 3 cups (300 g) oatmeal, 1/2 tsp ground ginger, and 1/2 tsp cinnamon into a blender. Blend until the mixture is fine and set aside.

  2. In a small bowl, rinse 1.8 oz (50 g) raisins with hot water and pat them dry with a tissue.

  3. Peel 1 apple, cut it into quarters, and combine it with 2 medium bananas and the juice of 1/2 lemon. Blend until smooth.

  4. In a large bowl, mix the blended oatmeal, the apple-banana mixture, and 4 tbsp coconut oil until well combined.

  5. Add the raisins, 1/3 cup (55 g) cornmeal, and 1 tbsp baking powder. Mix everything thoroughly to form a dough.

  6. Shape the dough into a round cake and cut it into 8 equal pieces.

  7. Place the pieces on a baking sheet and bake in a preheated oven at 360°F (180°C) for 20-25 minutes, or until golden brown.
