  • 2 eggs
  • Pinch of salt
  • 8g vanilla sugar
  • 90g sugar
  • 90g melted butter
  • 100ml milk
  • 150g flour
  • 150g almonds and walnuts, ground
  • 8g baking powder
  • 2 tbsp apricot jam
  • Powdered sugar (for dusting)
  • Walnuts (for garnish)

Directions

  1. In a mixing bowl, whisk together the eggs, sugar, vanilla sugar, and a pinch of salt until well combined. Add the melted butter and mix well. Pour in the milk and continue mixing until smooth.

  2. Using a blender or food processor, grind the almonds and walnuts into a fine mixture. In a separate bowl, combine the flour and baking powder, then mix well. Sift the wet egg mixture through a sieve into the dry ingredients. Add the ground almonds and walnuts, then mix until fully incorporated. Stir in the apricot jam and mix well to create a smooth batter.

  3. Pour the cake batter into a greased baking pan. Sprinkle 3 tablespoons of the flour mixture over the batter lightly. Place whole walnuts on top for garnish. Bake in a preheated oven at 180°C (356°F) for about 15 minutes, or until golden and firm.
