  • Flour: 250–260 g
  • Cottage cheese: 300 g
  • Sugar: 60 g
  • Butter: 100 g (softened)
  • Egg: 1
  • Baking powder: 1 tsp
  • Vanilla sugar: 1 tsp
  • Salt: A pinch
  • Almonds: 50 g

Directions

  1. In a bowl, mix together: 1 egg, 60 g sugar, 1 tsp vanilla sugar, A pinch of salt, 1 tsp baking powder, 300 g cottage cheese, 100 g softened butter. Combine thoroughly until smooth.

  2. Gradually add 250–260 g of flour to the mixture, starting with a whisk and then kneading with your hands. Add additional flour as needed to form a soft dough. Shape the dough into a ball and wrap it in a plastic bag. Let it rest for 15 minutes.

  3. Blend 50 g of almonds in a blender until finely chopped.

  4. Divide the dough into small portions. Roll each portion into a thin sheet. Trim the edges with a knife for clean sides, sprinkle the blended almonds on top, and roll up the dough tightly.

  5. Preheat the oven to 180°C (356°F). Arrange the rolls on a baking sheet lined with parchment paper. Bake for 15–18 minutes until golden.
