Directions

  1. In a heatproof bowl, combine the egg yolks, vanilla sugar, sugar, and cream. Heat the mixture gently while stirring until smooth. Strain the mixture through a sieve and set aside to cool.

  2. In a separate bowl, whisk the egg whites with a pinch of salt until frothy. Gradually add the sugar and continue whisking until soft peaks form. Fold in the almond flour gently until fully combined.

  3. Preheat your oven to 180°C (356°F). Pour the batter into a 20 cm round baking pan. Bake for 20 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool, then cut it horizontally into two layers.

  4. In a bowl, mix the softened butter with the cooled cream mixture until smooth. Spread a layer of the butter mixture over the bottom cake layer. Place the second cake layer on top and spread the remaining butter mixture over it. Sprinkle almonds on top for decoration.

  5. Let the assembled cake rest for 20–30 minutes to allow the flavors to meld together.
