  • 320 g flour
  • 150 g corn starch
  • 200 g butter
  • A pinch of salt
  • 2 tbsp sour cream (or yogurt)
  • 1 egg yolk
  • 100 ml water
  • 220 g almonds
  • 120 g sugar
  • 1 egg white
  • Honey or jam (for glazing)

Directions

  1. In a bowl, mix the 320 g flour, 150 g corn starch, and a pinch of salt. Once well combined, add the 200 g butter and mix with your hands until the mixture becomes fine and powdery. Then, add the 2 tbsp of sour cream (or yogurt) and 1 egg yolk. Mix everything together until smooth. Gradually add 100 ml of water, mixing until a soft dough forms. Let the dough rest for 10-12 minutes.

  2. In a blender, grind the 220 g of almonds into a fine powder. Then, place the almond powder in a pan, adding the 120 g sugar and 1 egg white. Mix thoroughly to combine the ingredients.

  3. Roll out the dough on a floured surface. Using a 10 cm round cutter, cut out circles of dough. Place a spoonful of the almond mixture on each dough circle. Carefully fold the edges over and pinch them to seal. Use a fork or knife to create small holes on top of each pastry. Arrange them on a baking sheet.

  4. Bake the pastries in an oven preheated to 180°C (350°F) for 35 minutes. Once golden and baked, remove them from the oven and glaze with honey or jam while they’re still warm.
