Directions

  1. In a saucepan, whisk together 2 eggs, 50 g sugar, corn starch, lemon zest, and 500 ml milk. Cook over medium heat, stirring continuously, until thick and creamy. Transfer the custard to a bowl, cover with plastic wrap (pressing it against the surface to prevent a skin from forming), and refrigerate until needed.

  2. In a large bowl, beat 3 eggs, 150 g caster sugar, lemon zest, and a pinch of salt until light and fluffy. Add the oil, curd, and milk, mixing until smooth. Sift in the flour and baking powder, then gently fold until just combined.

  3. Preheat the oven to 180°C (350°F). Grease and line a 28 cm cake pan. Pour the cake batter evenly into the pan. Transfer the chilled custard to a piping bag or a plastic bag with the tip cut off. Pipe the custard in a decorative pattern over the cake batter. Sprinkle sliced almonds on top. Bake for 40 minutes, or until golden brown and a toothpick inserted into the cake (not the custard) comes out clean.

  4. Let the cake cool slightly, then dust with powdered sugar before serving. Enjoy your Almond Custard Cake with a cup of tea or coffee!
