Ingredients

  • Flour: 350 g
  • Sugar: 110 g
  • Butter: 180 g
  • Egg: 1
  • Baking Powder: 10 g
  • Vanilla Sugar: 1 tsp
  • Salt: A pinch
  • Almonds (crushed): 100 g
  • Egg Yolk: 1
  • Milk: 1 tablespoon

Directions

  1. In a mixing bowl, combine butter (180 g), sugar (110 g), vanilla sugar (1 tsp), and a pinch of salt. Mix well. Add 1 egg and mix thoroughly until combined. Add baking powder (10 g) and flour (~350 g). Mix well. Gradually add a little more flour if needed. Knead the dough by hand until it becomes soft. Place the dough in a polythene bag and refrigerate for 30 minutes.

  2. Use a blender to crush 100 g of almonds into fine pieces.

  3. Divide the chilled dough into two portions. Roll out each portion between sheets of parchment paper. Use a 4 cm biscuit cutter to cut out rounds.

  4. In a small bowl, whisk together 1 egg yolk and 1 tablespoon of milk. Brush the egg wash onto the dough rounds. Sprinkle a small amount of crushed almonds on top of each biscuit.

  5. Preheat your oven to 180°C (356°F). Arrange the biscuits on a lined baking tray. Bake for 18-20 minutes, or until golden brown. Allow the biscuits to cool before serving.
